Cowboy Butter Lobster Tails

Ingredients:

4 lobster tails
1/2 cup melted butter
1 tablespoon lemon juice
1 teaspoon Dijon mustard
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
Salt and pepper to taste

Directions:

Preheat your grill to medium-high heat.
Using kitchen shears, carefully cut the top shell of each lobster tail lengthwise down the middle.
Gently pull the lobster meat out, resting it on top of the shells.
In a bowl, mix melted butter, lemon juice, Dijon mustard, garlic, parsley, paprika, cayenne pepper, salt, and pepper.
Brush the lobster tails generously with the butter mixture.
Place the lobster tails on the grill, meat side up, and cook for about 10-12 minutes or until the meat is opaque and cooked through.
Serve with extra cowboy butter on the side for dipping.
