Ingredients:
2 medium sweet potatoes
2 cups shredded rotisserie chicken
1 cup BBQ sauce
1 cup shredded cheddar cheese
1/4 cup chopped green onions
Salt and pepper to taste
Instructions:
Preheat oven to 400°F. Bake sweet potatoes for 45-60 minutes until tender.
Let cool, then cut in half lengthwise and scoop out flesh, leaving a small border.
Mix sweet potato flesh with chicken, BBQ sauce, half the cheese, green onions, salt, and pepper.
Refill sweet potato skins with mixture, top with remaining cheese.
Bake for an additional 15-20 minutes until cheese is melted and bubbly.
