Keto cheese puffs
Ingredients:
1 cup shredded mozzarella cheese
2 tablespoons cream cheese
1 large egg
1 cup almond flour
1/2 teaspoon baking powder
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup pepperoni slices, chopped (or other favorite pizza toppings like olives, mushrooms, or bell peppers)
1/4 cup grated Parmesan cheese (optional, for extra flavor)
1/2 cup sugar-free marinara sauce (for dipping)
Instructions:
Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
Melt Cheese:
In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave on high for 30 seconds, then stir. Repeat in 15-second intervals until the cheeses are fully melted and combined.
Prepare Dough:
In a large bowl, mix the almond flour, baking powder, garlic powder, oregano, basil, salt, and pepper. Stir in the melted cheese mixture until well combined. The dough will be thick and slightly sticky.
Add Egg: Beat the egg and add it to the dough. Mix until fully incorporated. Fold in the chopped pepperoni and grated Parmesan cheese if using.
Form the Puffs:
Using a tablespoon or cookie scoop, drop dollops of the dough onto the prepared baking sheet. They will spread a bit, so leave some space between each puff.
Bake: Bake in the preheated oven for 12-15 minutes, or until the pizza puffs are golden brown and firm to the touch.
Cool and Serve: Let the pizza puffs cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve warm with sugar-free marinara sauce for dipping, if desired.
