Ingredients:
6 bone-in, skin-on chicken thighs
1 ½ lbs baby potatoes, halved
3 tbsp olive oil
4 cloves garlic, minced
1 tbsp dried oregano
Juice of 2 lemons
Zest of 1 lemon
1 cup chicken broth
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
1️⃣ Preheat oven to 400°F (200°C).
2️⃣ In a large bowl, toss chicken thighs and potatoes with olive oil, garlic, oregano, lemon juice, and zest. Season with salt and pepper.
3️⃣ Arrange chicken and potatoes in a baking dish. Pour chicken broth around the dish.
4️⃣ Roast for 40-45 minutes, basting occasionally, until chicken is golden and potatoes are tender.
5️⃣ Garnish with fresh parsley and serve hot.
Notes:
You can substitute bone-in chicken thighs with boneless, but adjust cooking time.
