Chicken Fajita Casserole

Ingredients

– 3 cups shredded chicken
– 1 tablespoon olive oil
– 1 green bell pepper, sliced
– 1 red bell pepper, sliced
– 1 yellow onion, sliced
– 2 tablespoons fajita seasoning mix
– ½ teaspoon salt
– ¼ teaspoon black pepper
– 1 cup salsa
– 2 cups shredded cheddar cheese
– 2 tablespoons chopped fresh cilantro

Instructions

1. Preheat the oven to 375˚F.
2. In a large saucepan over medium-high heat add olive oil, once hot add the sliced bell peppers, onion, fajitas seasoning mix, salt, and pepper.
3. Cook until the vegetables are softened, about 8 minutes.
4. Remove from heat, and set aside.
5. Place the chicken at the bottom of the cooking dish, and top it with salsa.
6. Cover with the cooked bell peppers and onions.
7. Sprinkle shredded cheese on top.
8. Place in the oven and cook for 20 minutes.
9. Remove from the oven and garnish with fresh chopped cilantro.
10. Serve and enjoy!
