Red Snapper, Shrimp & Grits with Cajun Cream Sauce 

Ingredients:

2 red snapper fillets
1/2 lb large shrimp, peeled and deveined
1 cup grits
2 cups water
2 cups milk
4 tbsp unsalted butter
1/2 cup sharp cheddar cheese, shredded
1 tbsp olive oil
2 cloves garlic, minced
1 cup heavy cream
1 tbsp Cajun seasoning
1 tsp smoked paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Instructions:

Cook grits with water, milk, and 2 tbsp butter until creamy.
Stir in cheddar cheese, then season with salt and pepper. Set aside.
Season snapper fillets with salt, pepper, and paprika.
Heat olive oil in a skillet, then sear snapper until cooked through. Remove and set aside.
In the same skillet, add shrimp and cook until pink. Set aside.
In the skillet, melt remaining butter, add garlic, Cajun seasoning, and heavy cream. Stir until the sauce thickens.
Serve the snapper and shrimp over grits, drizzled with Cajun cream sauce. Garnish with fresh parsley.
Notes:

For extra heat, add a pinch of cayenne pepper to the Cajun sauce.
