Cheesy taquitos (chequitos)

Ingredients:

10 small corn tortillas
2 cups shredded cooked chicken
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup cream cheese, softened
1/4 cup chopped green onions
1/4 cup chopped cilantro
1 teaspoon garlic powder
1 teaspoon cumin
1/2 teaspoon chili powder
Salt and pepper to taste
Cooking spray or oil for brushing

Directions:

Preheat the oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Prepare the filling: In a large bowl, mix together the shredded chicken, cheddar cheese, Monterey Jack cheese, cream cheese, green onions, cilantro, garlic powder, cumin, chili powder, salt, and pepper until well combined.
Assemble the taquitos: Warm the corn tortillas slightly to make them pliable. Place about 2 tablespoons of the filling mixture on one side of each tortilla and roll it up tightly. Place the rolled taquitos seam-side down on the prepared baking sheet.
Bake the taquitos: Lightly spray or brush the taquitos with cooking spray or oil. Bake in the preheated oven for 15-20 minutes, or until the taquitos are crispy and golden brown.
