Classic Japanese Tonkatsu Sauce

Ingredients:

1/2 cup ketchup
1/4 cup Worcestershire sauce
1/4 cup soy sauce
1/4 cup mirin (sweet rice wine)
2 tablespoons sugar
1 tablespoon Dijon mustard
1 clove garlic, minced
1/4 teaspoon ground ginger

Directions:

In a small saucepan, combine all ingredients: ketchup, Worcestershire sauce, soy sauce, mirin, sugar, Dijon mustard, minced garlic, and ground ginger.
Cook over medium heat, stirring occasionally, until the mixture comes to a simmer.
Reduce the heat to low and continue to cook for 5-7 minutes, allowing the flavors to meld together. Stir frequently to prevent the sauce from sticking to the bottom of the pan.
Once the sauce has thickened slightly, remove from heat and let it cool.
Serve the Tonkatsu Sauce warm or at room temperature, drizzled over fried pork cutlets, or as a dipping sauce for your favorite Japanese dishes.
