Roasted Parmesan Creamed Onions

Ingredients:

– 4 large onions, peeled and cut into 1/2-inch thick rings
– 2 tbsp olive oil
– Salt and pepper, to taste
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 2 cloves garlic, minced
– 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
– Fresh thyme sprigs, for garnish (optional)

Directions:

1. Preheat oven to 375°F (190°C).
2. Place onion rings in a baking dish, drizzle with olive oil, season with salt and pepper, toss to coat.
3. Roast onions for 25-30 minutes until soft and caramelized.
4. Combine cream, Parmesan cheese, garlic, and thyme in a saucepan, heat until smooth.
5. Pour cream sauce over onions, bake for 15-20 minutes until bubbly.
6. Garnish with thyme sprigs and serve warm.
