Ingredients:
1 lb ground beef
1/2 lb bacon, chopped
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup breadcrumbs
1/4 cup ketchup
1/4 cup barbecue sauce
1 egg
1 cup shredded cheddar cheese
Salt and pepper to taste
Directions:
Preheat your oven to 375°F (190°C).
In a skillet, cook bacon until crispy. Remove and set aside, leaving a small amount of bacon fat in the pan.
Sauté onions and garlic in the skillet with the bacon fat until softened.
In a large bowl, combine ground beef, cooked bacon, sautéed onions and garlic, breadcrumbs, ketchup, barbecue sauce, egg, and cheese. Season with salt and pepper.
Shape the mixture into a loaf and place in a baking dish.
Bake for 45-55 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).
Let it rest for 10 minutes before slicing.
