Ingredients:
– 1 (20 oz.) can crushed pineapple, with juices
– 2 large eggs
– 1/4 cup vegetable oil
– 1 cup sugar
– 1/2 cup brown sugar
– 2 cups all-purpose flour
– 2 teaspoons baking soda
– 1/2 teaspoon salt
For the Icing:
– 1 (12 oz.) can evaporated milk
– 1 cup (2 sticks) unsalted butter
– 1 1/2 cups sugar
– 2 cups shredded coconut
– 1 cup pecans, roughly chopped, toasted
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
Directions:
1. Preheat oven to 350º F and grease a 9×13-inch baking dish.
2. Mix together eggs, sugars, oil, and crushed pineapple. Add flour, baking soda, and salt.
3. Pour batter into dish and bake for 25-30 minutes.
4. Prepare icing by cooking milk, sugar, and butter. Stir in coconut, pecans, vanilla, and salt.
5. Pour icing over baked cake and let cool before serving.
