Garlic Butter Pork Chops with Cheesy Potato Bake

Ingredients:

For the Pork Chops:
4 pork chops
4 tablespoons butter
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
For the Cheesy Potato Bake:
4 large potatoes, peeled and thinly sliced
2 cups shredded cheddar cheese
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste

Directions:

Preheat the Oven: Set your oven to 375°F (190°C).
Prepare the Pork Chops: Season the pork chops with salt, pepper, thyme, and rosemary. In a skillet, melt 2 tablespoons of butter over medium heat and cook the pork chops for about 4-5 minutes on each side, until golden brown. Add the minced garlic and the remaining butter, allowing it to melt and coat the chops. Remove from heat.
Prepare the Cheesy Potato Bake: In a large bowl, mix together the sliced potatoes, heavy cream, garlic, thyme, salt, and pepper. Layer the potatoes in a baking dish, sprinkling cheddar and Parmesan cheese between the layers.
Assemble and Bake: Place the pork chops on top of the potato bake. Cover with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, until the potatoes are tender and the cheese is bubbly and golden.
Serve and Enjoy: Let the dish rest for a few minutes before serving. Enjoy a hearty, comforting meal with loved ones!
