Ingredients:

For the Chicken:
4 boneless, skinless chicken breasts
1 cup fresh spinach leaves
1 cup roasted red peppers, sliced
1 cup shredded mozzarella cheese
2 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper, to taste
2 tablespoons olive oil

For the Seasoning:
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper

Instructions:

Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Chicken:

Place the chicken breasts on a cutting board. Using a sharp knife, cut a pocket into each chicken breast, being careful not to cut all the way through.
Stuff the Chicken:

In a small bowl, mix the spinach, roasted red peppers, mozzarella cheese, minced garlic, dried basil, and dried oregano.
Season the mixture with salt and pepper to taste.
Stuff each chicken breast with the mixture, ensuring it is evenly distributed.
Secure the Filling:

Use toothpicks to secure the open edges of the chicken breasts to keep the filling inside during cooking.
Season the Chicken:

In another small bowl, combine the paprika, garlic powder, onion powder, salt, and black pepper.
Rub the seasoning mixture all over the outside of each stuffed chicken breast.
Sear the Chicken:

In a large oven-safe skillet, heat the olive oil over medium-high heat.
Add the stuffed chicken breasts to the skillet and sear for 3-4 minutes on each side, or until golden brown.
Roast the Chicken:

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Rest and Serve:

Remove the toothpicks from the chicken breasts.
Let the chicken rest for 5 minutes before serving to allow the juices to redistribute.

Servings: 4. Calories: Approximately 350 per serving

Notes:
For an extra burst of flavor, you can add some sun-dried tomatoes to the stuffing mixture.

This dish pairs wonderfully with a side of roasted vegetables or a fresh green salad.
Make sure to let the chicken rest after cooking to ensure it stays juicy and flavorful.

Enjoy this delicious and elegant Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken for a satisfying and impressive meal!
