Ingredients:
• 1 lb ground beef sausage
• 1 (20 oz) package refrigerated hash browns
• 2 cups shredded cheddar cheese
• 3 eggs, beaten
• 1/4 cup chopped green onions
• 1/2 tsp salt
• 1/4 tsp black pepper
Directions:
1. Preheat your oven to 400°F (200°C).
2. In a large skillet, cook the ground beef sausage over medium heat until browned and cooked through. Drain any excess fat.
3. In a large bowl, combine the cooked sausage, hash browns, shredded cheddar cheese, beaten eggs, chopped green onions, salt, and black pepper. Mix well.
4. Grease a mini muffin tin with non-stick cooking spray.
5. Spoon the hashbrown mixture into the prepared muffin tin, filling each cup to the top and pressing down slightly.
6. Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and crispy on the edges.
7. Allow to cool for a few minutes before removing from the muffin tin.
8. Serve warm and enjoy!
