Chicken Ricotta Meatballs with Spinach Alfredo Sauce 

Ingredients:

For the Chicken Ricotta Meatballs:
– 1 lb ground chicken
– 1/2 cup ricotta cheese
– 1/4 cup breadcrumbs
– 1 egg
– 2 cloves garlic, minced
– 1/4 cup grated parmesan cheese
– 1/2 tsp dried basil
– 1/2 tsp dried oregano
– Salt and pepper, to taste

For the Spinach Alfredo Sauce:
– 2 tbsp butter
– 2 cloves garlic, minced
– 1 cup heavy cream
– 1 cup grated parmesan cheese
– 1 cup chopped fresh spinach
– Salt and pepper, to taste

Instructions:

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. In a large bowl, combine the ground chicken, ricotta cheese, breadcrumbs, egg, garlic, parmesan cheese, basil, oregano, salt, and pepper. Mix until well combined.

3. Shape the mixture into meatballs and place them on the prepared baking sheet.

4. Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through and browned.

5. While the meatballs are baking, prepare the Spinach Alfredo Sauce. In a saucepan, melt the butter over medium heat. Add the garlic and cook until fragrant.

6. Pour in the heavy cream and bring to a simmer. Stir in the grated parmesan cheese until melted and smooth.

7. Add the chopped spinach to the sauce and cook until wilted. Season with salt and pepper to taste.

8. Serve the Chicken Ricotta Meatballs with the Spinach Alfredo Sauce spooned over the top. Enjoy with pasta, rice, or crusty bread. Garnish with additional parmesan cheese and fresh herbs, if desired.
