Air Fryer Cherry Cheesecake Egg Rolls

Ingredients:

8 oz cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup cherry pie filling
8 egg roll wrappers
1 egg, beaten (for egg wash)
Powdered sugar (for dusting)
Cooking spray

Directions:

Prepare the filling: In a medium bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until smooth and well combined.
Assemble the egg rolls: Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon about 2 tablespoons of the cream cheese mixture onto the center of the wrapper, and top with 1 tablespoon of cherry pie filling.
Fold the egg rolls: Fold the bottom corner up over the filling, then fold in the sides. Brush the top corner with the beaten egg and roll up tightly to seal.
Preheat the air fryer: Preheat your air fryer to 350°F (175°C) for 3 minutes.
Air fry the egg rolls: Lightly spray the egg rolls with cooking spray and place them in the air fryer basket in a single layer, leaving space between each one. Air fry at 350°F (175°C) for 8-10 minutes, turning halfway through, until golden brown and crispy.
Cool and serve: Remove the egg rolls from the air fryer and let them cool for a few minutes. Dust with powdered sugar before serving.
