Fried Jalapeños with Brie and Honey Drizzle

Ingredients:

8 large jalapeños
4 oz Brie cheese, cut into small pieces
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
Vegetable oil for frying
1/4 cup honey
Salt and pepper to taste
Fresh thyme for garnish

Directions:

Cut the jalapeños in half lengthwise and remove the seeds and membranes. Stuff each half with a piece of Brie cheese.
Place the flour, beaten eggs, and panko breadcrumbs in three separate shallow bowls.
Dip each stuffed jalapeño first in the flour, then in the beaten eggs, and finally coat with panko breadcrumbs.
In a large skillet, heat about 1 inch of vegetable oil over medium-high heat. Once the oil is hot, fry the jalapeños in batches until golden brown and crispy, about 2-3 minutes per side.
Remove the fried jalapeños with a slotted spoon and drain on paper towels. Season with salt and pepper.
Drizzle the honey over the fried jalapeños and garnish with fresh thyme before serving.
