Ingredients:
– 1 lb large shrimp, peeled and deveined
– 1 cup all-purpose flour
– 1 cup cornmeal
– 1 teaspoon paprika
– 1 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon cayenne pepper
– 2 large eggs
– 1/4 cup milk
– Vegetable oil, for frying
– Lemon wedges, for serving
– Cocktail sauce, for serving
Directions:
1. In a medium bowl, combine the flour, cornmeal, paprika, garlic powder, salt, black pepper, and cayenne pepper.
2. In another bowl, whisk together the eggs and milk.
3. Dip each shrimp into the egg mixture, then dredge in the flour mixture, ensuring each shrimp is well coated. Place the coated shrimp on a plate.
4. In a large skillet or deep fryer, heat the vegetable oil over medium-high heat to 350°F (175°C).
5. Fry the shrimp in batches, being careful not to overcrowd the skillet, for about 2-3 minutes on each side or until golden brown and crispy.
6. Remove the shrimp from the oil and place on a paper towel-lined plate to drain any excess oil.
7. Serve the shrimp hot with lemon wedges and cocktail sauce on the side.
