Crockpot Ham and Potato Casserole
Ingredients:
4 cups diced potatoes (peeled or unpeeled)
2 cups cooked ham, cubed
1 cup shredded cheddar cheese
1 cup sour cream
½ cup milk
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
½ cup chopped green onions (optional)
1 tablespoon olive oil or butter (for greasing)
Directions:
Grease the inside of your crockpot with olive oil or butter to prevent sticking.
Layer the diced potatoes evenly at the bottom of the crockpot.
Add the cubed ham on top of the potatoes, spreading it out evenly.
In a medium bowl, mix together the sour cream, milk, garlic powder, onion powder, salt, and black pepper until smooth.
Pour the sour cream mixture evenly over the potatoes and ham in the crockpot.
Sprinkle the shredded cheddar cheese over the top, covering everything evenly.
Cover the crockpot with its lid and cook on low for 6-7 hours or until the potatoes are tender and cooked through. You can also cook on high for about 3-4 hours if you’re short on time.
If desired, sprinkle chopped green onions on top for added flavor and color just before serving.
