Heavenly No-Bake Chocolate & Peanut Butter Layered Dessert Bars
Ingredients:
8 ounces cream cheese, softened
1 (3.9-ounce) box instant chocolate pudding mix
1 1/2 cups plus 1 tablespoon cold whole or 2% milk, divided
6 tablespoons (3/4 stick) unsalted butter, melted
26 Oreo sandwich cookies (about 10 1/2 ounces)
1/2 teaspoon kosher salt, divided
1 1/2 cups cold heavy cream
3/4 cup plus 2 tablespoons powdered sugar, divided
1/2 cup plus 1 tablespoon creamy peanut butter, divided
1/2 (about 2-ounce) bar dark or milk chocolate (optional, for garnish)
Directions:
Line an 8×8-inch pan with parchment paper, allowing the paper to hang over all sides.
Whisk pudding mix with 1 1/2 cups cold milk for 2 minutes until slightly thickened. Set aside.
Crush Oreo cookies into fine crumbs using a food processor. Combine with melted butter and 1/4 tsp salt. Press mixture firmly into the pan to form a crust. Chill.
In a stand mixer, whip cold heavy cream with 1/4 cup powdered sugar until stiff peaks form. Transfer to a separate bowl.
Beat cream cheese with 1/2 cup powdered sugar, 1/2 cup peanut butter, and remaining salt until light and fluffy. Fold in 1 cup of the whipped cream.
Layer chocolate pudding over the crust, followed by the peanut butter mixture, then the remaining whipped cream. Spread each layer evenly.
Cover and refrigerate for at least 4 hours or overnight.
Mix 2 tablespoons powdered sugar, 1 tablespoon peanut butter, and 1 tablespoon milk to create a drizzle. Drizzle over the top and garnish with chocolate shavings, if using.
Lift from pan using parchment sling, cut into 12 bars, and wipe knife clean between cuts.
