Cilantro Lime Chicken Thighs
Ingredients:
1.5 lbs chicken thighs (boneless and skinless)
3 tablespoons olive oil
1/4 cup freshly squeezed lime juice (about 2 limes)
Zest of 1 lime
3 cloves garlic, minced
1/4 cup fresh cilantro, chopped (plus more for garnish)
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions:
Marinate the Chicken:
In a bowl, whisk together olive oil, lime juice, lime zest, garlic, cilantro, cumin, smoked paprika, salt, and pepper.
Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Marinate in the refrigerator for at least 30 minutes or up to 4 hours for best flavor.
Cook the Chicken:
For Grilling: Preheat the grill to medium-high heat. Grill chicken thighs for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
For Baking: Preheat oven to 400°F (200°C). Arrange chicken thighs on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until cooked through.
For Pan-Searing: Heat a large skillet over medium-high heat. Add a little oil and cook chicken thighs for 5-6 minutes per side, until golden and fully cooked.
Serve:
Garnish with extra chopped cilantro and serve with lime wedges.
