Pizza Grilled Cheese
Ingredients:
For the Garlic Butter Spread:
½ cup unsalted butter, softened
1 tbsp grated Parmesan cheese
1 tsp garlic powder
½ tsp dried Italian seasoning
For the Sandwich:
8 slices white bread
12 slices mozzarella cheese
6 oz pepperoni
Warm pizza sauce, for dipping
Instructions:
Prepare the Garlic Butter Spread:
In a bowl, mix softened butter, Parmesan cheese, garlic powder, and Italian seasoning until smooth.
Prep the Bread:
Spread the garlic butter mixture evenly on one side of each bread slice.
Place the slices butter-side up on a plate while preparing the filling.
Assemble the Sandwich:
Place one slice of bread, butter-side down, into a skillet over medium-low heat.
Layer with a slice of mozzarella cheese, 6 slices of pepperoni, another slice of mozzarella, another 6 slices of pepperoni, and a final slice of mozzarella.
Top with a second slice of bread, butter-side up.
Cook Until Golden:
Cover the skillet with a lid and cook for 3-5 minutes until the bottom is golden brown.
Carefully flip the sandwich using a spatula, cover again, and cook until the second side is crispy and the cheese is melted.
Serve and Enjoy:
Remove from the skillet and let cool slightly before slicing.
Serve with warm pizza sauce for dipping.
Notes:
Pre-cook any added veggies to prevent excess moisture.
Let the sandwich cool on a wire rack for extra crispiness.
Mozzarella melts best, but provolone or a mix of cheddar and Parmesan add more flavor.
Avoid pressing down on the sandwich while cooking to keep the cheese gooey inside.
