Snickerdoodle Cobbler
Ingredients:
For the Cobbler:
1 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
2 tsp baking powder
1/4 tsp salt
1/2 cup (1 stick) unsalted butter, melted
1 cup whole milk
2 tsp vanilla extract
For the Cinnamon Sugar Topping:
1/2 cup granulated sugar
1/2 cup light brown sugar
2 tsp ground cinnamon
1 1/2 cups boiling water
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or cobbler pan.
Mix the Batter:
In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Stir in the melted butter, milk, and vanilla extract until smooth. Pour the batter into the prepared baking dish.
Prepare the Cinnamon Sugar Topping:
In a small bowl, mix together the granulated sugar, light brown sugar, and cinnamon until well combined.
Add the Topping:
Sprinkle the cinnamon-sugar mixture evenly over the top of the cobbler batter.
Pour Boiling Water:
Carefully pour the boiling water over the entire dish. Do not stir—the water will help create a sauce while baking.
Bake:
Bake the cobbler in the preheated oven for 45-50 minutes or until the top is golden brown and crisp, and the edges are bubbling.
Cool and Serve:
Let the cobbler cool for 10-15 minutes before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
