Crispy Breaded Chicken
Ingredients:
2 large boneless, skinless chicken breasts
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika
2 large eggs
2 tablespoons milk
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese (optional)
1 teaspoon dried oregano or Italian seasoning
1/2 teaspoon cayenne pepper (optional, for spice)
1/4 cup vegetable oil (for frying)
Directions:
Prepare the Chicken: Slice each chicken breast in half lengthwise to create thinner fillets. Pound them lightly to an even thickness using a meat mallet or rolling pin.
Set Up the Breading Station:
In the first bowl, mix flour, salt, black pepper, garlic powder, and paprika.
In the second bowl, whisk together eggs and milk.
In the third bowl, combine panko breadcrumbs, Parmesan cheese (if using), oregano, and cayenne pepper.
Bread the Chicken: Dredge each chicken fillet in the flour mixture, shaking off excess. Dip it into the egg mixture, then coat it in the panko breadcrumb mixture, pressing firmly to adhere.
Heat the Oil: In a large skillet, heat vegetable oil over medium heat until shimmering (about 350°F/175°C).
Fry the Chicken: Cook the chicken fillets for about 4-5 minutes per side or until golden brown and crispy. Ensure the internal temperature reaches 165°F (75°C).
Drain & Serve: Remove the chicken from the pan and place on a paper towel-lined plate to drain excess oil. Let it rest for a few minutes before serving.
