Crockpot French Onion Meatloaf with Melted Swiss Cheese .

Ingredients:

2 lbs ground beef
1 cup breadcrumbs
1/2 cup whole milk
1 packet onion soup mix
1 large onion, thinly sliced
1/2 cup beef broth
2 eggs
1 teaspoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
6 slices Swiss cheese
1 tablespoon butter
1 tablespoon olive oil
2 tablespoons fresh parsley (for garnish)

Directions:

In a skillet, heat olive oil and butter over medium heat. Add sliced onions and cook until caramelized, about 15-20 minutes. Set aside.
In a large mixing bowl, combine ground beef, breadcrumbs, milk, onion soup mix, eggs, Worcestershire sauce, garlic powder, salt, and black pepper. Mix until well combined.
Shape the mixture into a loaf and place it in the crockpot. Pour beef broth over the meatloaf.
Spread the caramelized onions over the top of the meatloaf.
Cover and cook on low for 6-7 hours or on high for 3-4 hours.
About 10 minutes before serving, place Swiss cheese slices on top of the meatloaf. Cover and let them melt.
Garnish with fresh parsley and serve hot.
