Classic Meatloaf with Glaze
Ingredients:
For the meatloaf:
1 1/2 pounds ground beef (80/20 blend)
1 cup breadcrumbs (plain or Italian)
1/2 cup milk
1/2 cup onion, finely chopped
1/4 cup ketchup
2 large eggs
2 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
For the glaze:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
1 teaspoon mustard (yellow or Dijon)
Directions:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the ground beef, breadcrumbs, milk, chopped onion, ketchup, eggs, Worcestershire sauce, garlic powder, salt, and black pepper. Mix until just combined; avoid overmixing.
Transfer the meat mixture to a loaf pan and shape it into a loaf.
In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and mustard for the glaze. Spread half of the glaze over the top of the meatloaf.
Bake the meatloaf in the preheated oven for 1 hour. During the last 15 minutes of baking, spread the remaining glaze over the top.
Remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
Serve hot with your choice of sides, such as mashed potatoes or green beans.
