Crockpot French Onion Meatloaf with Melted Swiss Cheese

Ingredients:

3-4 large sweet onions, sliced
4 tablespoons salted butter
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 pound ground beef
1 cup breadcrumbs
1/4 cup milk
1 large egg
1 cup shredded Swiss cheese
Fresh parsley, chopped (for garnish)

Directions:

1️⃣ Caramelize the Onions:
In a skillet, melt the butter over medium heat. Add the sliced onions and sprinkle with salt. Cook the onions, stirring occasionally, until they are caramelized, about 15-20 minutes.
2️⃣ Mix the Meatloaf:
In a large bowl, combine the ground beef, breadcrumbs, milk, egg, black pepper, garlic powder, and onion powder. Mix until well combined.
3️⃣ Shape the Meatloaf:
Shape the meat mixture into a loaf and place it in the crockpot.
4️⃣ Top with Onions:
Top the meatloaf with the caramelized onions, spreading them evenly over the top.
5️⃣ Cook:
Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours, until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
6️⃣ Add Cheese:
About 15 minutes before serving, sprinkle the shredded Swiss cheese on top of the meatloaf. Cover and let it melt.
7️⃣ Rest and Slice:
Once done, carefully lift the meatloaf from the crockpot and let it rest for a few minutes.
8️⃣ Serve:
Slice and serve, garnished with fresh parsley if desired.
