French Onion-Inspired Meatloaf with Sweet Caramelized Onions
Ingredients:
1 lb ground beef (or a mix of beef and pork)
1 medium onion, thinly sliced
1 tablespoon olive oil
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
1/2 cup grated Gruyère cheese (optional)
2 tablespoons fresh parsley, chopped (optional, for garnish)
Directions:
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
In a skillet, heat the olive oil over medium heat. Add the sliced onion and cook, stirring occasionally, for 15-20 minutes until the onions are golden brown and caramelized. Set aside to cool.
In a large bowl, combine the ground beef, breadcrumbs, milk, egg, Worcestershire sauce, Dijon mustard, thyme, rosemary, salt, and pepper. Mix until well combined.
Fold in half of the caramelized onions (reserve the rest for topping). If using, also stir in the grated Gruyère cheese for extra richness.
Form the meat mixture into a loaf shape and place it on the prepared baking sheet or into a loaf pan.
Bake in the preheated oven for 40-45 minutes, or until the meatloaf is cooked through and an internal thermometer reads 160°F (71°C).
Remove the meatloaf from the oven, and top it with the remaining caramelized onions. Let it rest for 5-10 minutes before slicing.
Garnish with fresh parsley, if desired, and serve hot with mashed potatoes, roasted vegetables, or a side salad.
