Ingredients:
1 package of Oreo cookies (about 36 cookies)
1 cup creamy peanut butter (or chunky, if you prefer texture)
4 oz (about 1/2 cup) cream cheese, softened
1 cup powdered sugar
12 oz semi-sweet or milk chocolate chips (for coating)
1 tablespoon coconut oil (optional, for smoother chocolate coating)
Instructions:
Prepare the Oreo mixture:
Place the Oreo cookies in a large ziplock bag or between two sheets of wax paper, and crush them into fine crumbs using a rolling pin (or use a food processor for quicker results).
In a large mixing bowl, combine the crushed Oreos, peanut butter, softened cream cheese, and powdered sugar. Mix well until everything is fully combined and a thick dough forms.
Form the Oreo bites:
Use your hands or a small cookie scoop to form small bite-sized balls from the Oreo mixture. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
Freeze the balls:
Once you’ve rolled all the balls, place the baking sheet in the freezer for at least 30 minutes, or until the balls are firm. This helps them hold their shape when dipped in chocolate.
Melt the chocolate:
In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 30-second intervals, stirring in between until completely smooth and melted. The coconut oil helps the chocolate stay shiny and makes it easier to coat the bites.
Dip the Oreo bites:
Using a fork or toothpick, dip each frozen Oreo peanut butter ball into the melted chocolate, making sure it’s fully coated. Tap off any excess chocolate, then return the ball to the parchment-lined sheet.
Chill to set:
Once all the bites are coated, place them back in the freezer or refrigerator for about 20-30 minutes, or until the chocolate coating is firm.
