Pumpkin Crisp

Ingredients

– 1 can (15 oz) pumpkin puree
– 1 cup brown sugar
– 1/2 cup all-purpose flour
– 1 teaspoon cinnamon
– 1/2 teaspoon nutmeg
– 1/4 teaspoon ginger
– 1/2 cup oats
– 1/2 cup butter, melted

Instructions:

1. Prepare the Filling:
– Preheat oven to 350°F (175°C). Mix pumpkin puree, 1/2 cup brown sugar, cinnamon, nutmeg, and ginger in a bowl.
2. Prepare the Topping:
– In another bowl, combine remaining brown sugar, flour, oats, and melted butter.
3. Assemble and Bake:
– Spread the pumpkin mixture in a baking dish and sprinkle with the topping. Bake for 45 minutes, or until topping is golden brown.
4. Serve:
– Serve warm, optionally with a scoop of vanilla ice cream.
