Bacon Cheeseburger Meatloaf Bites

Ingredients:

– 1 lb (450 g) ground beef
– 4 slices bacon, cooked and crumbled
– 1 cup shredded cheddar cheese
– 1/2 cup breadcrumbs
– 1/4 cup finely chopped onion
– 1/4 cup ketchup
– 1 large egg
– 2 tbsp Worcestershire sauce
– 1 tsp garlic powder
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1/2 cup barbecue sauce (for topping, optional)
– Fresh parsley, chopped (for garnish, optional)

Directions:

1. Prepare the Meat Mixture:
– Preheat your oven to 375°F (190°C).
– In a large bowl, combine ground beef, crumbled bacon, shredded cheddar cheese, breadcrumbs, chopped onion, ketchup, egg, Worcestershire sauce, garlic powder, salt, and black pepper. Mix until well combined.
2. Form the Meatloaf Bites:
– Lightly grease a mini muffin tin or line it with paper liners.
– Scoop the meat mixture into the muffin tin, filling each cup about 3/4 full. Use the back of a spoon to press down and pack the mixture.
3. Bake the Meatloaf Bites:
– Bake in the preheated oven for 15-20 minutes, or until the meatloaf bites are cooked through and reach an internal temperature of 160°F (71°C).
– If using barbecue sauce, brush a small amount over each meatloaf bite during the last 5 minutes of baking.
4. Serve:
– Allow the meatloaf bites to cool slightly before removing from the muffin tin.
– Garnish with chopped fresh parsley if desired. Serve warm.
