Bacon Cheeseburger Meatloaf
Ingredients:
1 1/2 lbs ground beef
1 cup breadcrumbs
1 egg, beaten
1/2 cup shredded cheddar cheese
1/2 cup cooked, crumbled bacon
1/4 cup ketchup
1/4 cup mustard
1/4 cup mayonnaise
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1/4 cup diced pickles (optional)
1/2 cup shredded cheddar cheese (for topping)
4 strips of bacon (for topping)
1 tablespoon ketchup (for topping)
Directions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper for easy removal.
Prepare the Meatloaf Mixture:
In a large bowl, combine the ground beef, breadcrumbs, beaten egg, 1/2 cup shredded cheddar cheese, crumbled bacon, ketchup, mustard, mayonnaise, Worcestershire sauce, garlic powder, onion powder, salt, pepper, and diced pickles (if using). Mix until everything is well combined, but don’t overwork the meat.
Form the Meatloaf:
Transfer the meat mixture into the prepared loaf pan. Press it down evenly to form a loaf shape.
Add Toppings:
Spread 1 tablespoon of ketchup over the top of the meatloaf. Then lay 4 strips of bacon over the top, overlapping if necessary.
Bake:
Place the loaf pan in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
Cheese Topping:
About 10 minutes before the meatloaf is done, sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top and allow it to melt.
Serve:
Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve with your favorite burger toppings like extra pickles, lettuce, or tomato.
