Peanut Butter Chocolate Chip Cookie Bars

Ingredients:

1 cup peanut butter (creamy or chunky)
½ cup unsalted butter, softened
1 cup brown sugar, packed
2 teaspoons vanilla extract
2 large eggs
1 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 cup chocolate chips (milk or semi-sweet)

Instructions:

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Line a 9×13-inch baking dish with parchment paper or lightly grease it.

Step 2: Prepare the Dough
In a large bowl, mix together the peanut butter, unsalted butter, and brown sugar using a hand mixer or stand mixer until the mixture is smooth and creamy.
Add the vanilla extract and eggs, one at a time, mixing well after each addition.
In a separate bowl, combine the all-purpose flour, baking soda, and salt. Slowly add the dry ingredients to the wet ingredients and mix until fully combined.

Step 3: Add the Chocolate Chips
Gently fold in the chocolate chips until evenly distributed throughout the dough.

Step 4: Bake
Spread the dough evenly into the prepared baking dish.
Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.

Step 5: Cool and Serve
Allow the cookie bars to cool in the pan for about 10 minutes.
Once cooled, cut into squares and serve. Enjoy!
