Cheesy Baked Potato Croquettes

Ingredients:

2 cups mashed potatoes (cooled)
1 cup shredded cheddar cheese (or mozzarella)
¼ cup grated Parmesan cheese
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
1 large egg
¾ cup breadcrumbs (divided)
½ cup all-purpose flour
1 tablespoon chopped parsley (optional)
1 tablespoon olive oil (for brushing)

Instructions:

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the Mixture: In a mixing bowl, combine mashed potatoes, shredded cheese, Parmesan cheese, garlic powder, onion powder, salt, black pepper, egg, and ¼ cup breadcrumbs. Mix well until evenly combined.
Shape the Croquettes: Scoop about 2 tablespoons of the mixture and shape it into small cylinders or balls.
Coating: Roll each croquette in flour, then dip it in a little beaten egg (if needed), and finally coat it with the remaining breadcrumbs.
Arrange on Baking Sheet: Place the coated croquettes on the prepared baking sheet and lightly brush them with olive oil.
Bake: Bake for 20–25 minutes or until golden brown and crispy. Flip them halfway through baking for even crispiness.
Garnish & Serve: Sprinkle with chopped parsley and serve hot with your favorite dipping sauce.
