Ingredients:

1 1/2 lbs ground beef
1/2 lb ground pork (optional, for added flavor and moisture)
1 cup breadcrumbs (or crushed crackers)
1/2 cup shredded cheddar cheese
1 small onion, finely chopped
1/4 cup ketchup
2 tablespoons mustard
1 tablespoon Worcestershire sauce
2 eggs
1/4 cup dill pickles, finely chopped (optional, for a cheeseburger twist)
Salt and black pepper, to taste
1 teaspoon garlic powder
1 teaspoon onion powder
For the Topping:
1/4 cup ketchup
2 tablespoons mustard
1 tablespoon brown sugar (optional, for a bit of sweetness)
1/2 cup shredded cheddar cheese

Instructions:

1. Preheat Oven:
Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper for easy removal.
2. Make the Meatloaf Mixture:
In a large bowl, combine the ground beef, ground pork (if using), breadcrumbs, shredded cheddar cheese, chopped onion, ketchup, mustard, Worcestershire sauce, eggs, chopped pickles (if using), garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated, but avoid overmixing to keep the meatloaf tender.
3. Form the Meatloaf:
Transfer the meatloaf mixture to the prepared loaf pan and press it down evenly to form a loaf shape.
4. Prepare the Topping:
In a small bowl, mix together the ketchup, mustard, and brown sugar. Spread this mixture evenly over the top of the meatloaf.
5. Bake:
Bake the meatloaf in the preheated oven for 45 minutes. Remove from the oven, sprinkle the remaining shredded cheddar cheese on top, and return to the oven. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the internal temperature of the meatloaf reaches 160°F (71°C).
6. Rest and Serve:
Allow the meatloaf to rest for 5-10 minutes before slicing. This will help it hold its shape. Serve with your favorite burger-style sides, such as mashed potatoes, fries, or a simple salad.
