One-Pot Honey BBQ Chicken Pasta

Ingredients:

1 lb boneless, skinless chicken breast, diced
2 tablespoons olive oil
3 cloves garlic, minced
2 cups chicken broth
1 cup milk
½ cup smoky barbecue sauce
2 tablespoons honey
12 oz pasta (penne or rotini)
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 teaspoon paprika
½ teaspoon chili powder
Salt and black pepper, to taste
2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

Cook the Chicken:

Heat olive oil in a large pot or deep skillet over medium heat.
Add the diced chicken, sprinkle with paprika, chili powder, salt, and black pepper, and cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through.
Sauté the Garlic:

Add the minced garlic and cook for about 1 minute, stirring frequently, until fragrant.
Add Liquids & Pasta:

Pour in the chicken broth, milk, barbecue sauce, and honey, stirring well to blend the flavors.
Bring the mixture to a gentle boil, then add the pasta, ensuring it’s fully submerged.
Simmer to Perfection:

Reduce the heat to low, cover, and let the pasta cook for 12-15 minutes, stirring occasionally.
The pasta should be tender, and the sauce will thicken as it simmers.
Melt in the Cheese:

Stir in the mozzarella and Parmesan cheese, mixing until fully melted and the sauce turns creamy.
Serve & Garnish:

Remove from heat and let sit for a couple of minutes to allow the flavors to meld.
Garnish with fresh chopped parsley and serve warm.
