Ingredients:

1 lb ground beef
1 tablespoon taco seasoning
1 (10 oz) can diced tomatoes with green chilies (like Rotel), drained
1 (16 oz) block Velveeta cheese, cubed
1 cup shredded cheddar cheese
Milk (optional, for desired consistency)
1 teaspoon garlic powder
1 teaspoon onion powder
Tortilla chips, for serving
Fresh cilantro, chopped (for garnish)

Directions:

In a large skillet, cook the ground beef over medium-high heat, breaking it apart with a spoon, until browned and cooked through, about 5-6 minutes.
Drain any excess grease, then add the taco seasoning, garlic powder, and onion powder to the beef. Stir to combine.
Add the diced tomatoes with green chilies to the skillet and cook for an additional 2 minutes, stirring occasionally.
Lower the heat to medium and add the cubed Velveeta cheese. Stir frequently until the cheese is fully melted and the mixture becomes smooth.
If the dip is too thick, add a little milk to reach your desired consistency and continue stirring until smooth.
Stir in the shredded cheddar cheese until melted and fully combined.
Serve the queso dip with tortilla chips and garnish with chopped fresh cilantro.
