Bang Bang Chicken Skewers
Ingredients
1 lb chicken breast, cut into bite-sized cubes
1 tablespoon olive oil
Salt and pepper to taste
1/2 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon sriracha sauce (adjust to spice preference)
1 teaspoon rice vinegar
1 tablespoon honey
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Fresh cilantro, chopped (for garnish)
Sesame seeds (for garnish)
Skewers (wooden or metal)
Directions:
Preheat your grill or grill pan to medium-high heat. If using wooden skewers, soak them in water for 10-15 minutes to prevent burning.
Thread the chicken cubes onto the skewers, brushing them with olive oil and seasoning with salt and pepper.
Grill the chicken skewers for 5-7 minutes per side, or until the chicken is fully cooked and has nice grill marks.
While the chicken cooks, prepare the Bang Bang sauce. In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha sauce, rice vinegar, honey, garlic powder, and onion powder until smooth.
Once the chicken skewers are cooked, drizzle the Bang Bang sauce over the chicken or toss the skewers in the sauce for full coverage.
Garnish with chopped cilantro and sesame seeds before serving.
