Chicken Parmesan Stuffed with Cream Cheese
Ingredients
4 boneless, skinless chicken breasts
8 ounces cream cheese, softened
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon fresh basil, chopped (optional)
1 cup marinara sauce
1/2 cup breadcrumbs
1 tablespoon olive oil
1 egg, beaten
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
Directions:
Preheat your oven to 375°F (190°C). Grease a baking dish with a little olive oil and set aside.
In a bowl, combine the softened cream cheese, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, and fresh basil (if using). Mix until smooth and well combined.
Carefully slice a pocket into each chicken breast, making sure not to cut all the way through. Stuff each chicken breast with the cream cheese mixture, securing the opening with toothpicks if necessary.
Dip each stuffed chicken breast into the beaten egg, then coat it with breadcrumbs. Season with salt and pepper to taste.
Heat olive oil in a skillet over medium heat. Sear each chicken breast for 2-3 minutes per side, until golden brown.
Once seared, place the chicken breasts in the prepared baking dish. Top each chicken breast with a spoonful of marinara sauce and a sprinkle of Parmesan cheese.
Bake in the oven for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
Remove from the oven, garnish with fresh parsley (if desired), and serve hot.
