French Onion Potato Bake
Creamy and savory potato bake with a French onion twist
Ingredients:
– 4 large potatoes, thinly sliced
– 2 large onions, thinly sliced
– 2 tablespoons olive oil
– 1 cup vegetable broth
– 1 teaspoon garlic powder
– 1 teaspoon dried thyme
– 1/2 cup dairy-free cheese, shredded
– Salt and pepper to taste
Directions:
Preheat oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add the sliced onions and sauté until caramelized, about 15-20 minutes.
Layer half of the sliced potatoes in a greased baking dish. Season with salt, pepper, and half of the garlic powder and thyme.
Spread half of the caramelized onions over the potatoes.
Repeat the layers with the remaining potatoes, seasonings, and onions.
Pour vegetable broth over the potato and onion layers.
Cover the baking dish with foil and bake for 45 minutes.
Remove the foil, sprinkle dairy-free cheese on top, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
