Creamy Chicken & Mushroom Pasta
Ingredients:
– 2 chicken breasts, cubed
– 1 cup sliced mushrooms
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 cup heavy cream
– 1/2 cup chicken broth
– 1/2 cup grated Parmesan cheese
– 8 ounces pasta (spaghetti or linguine)
– Salt, pepper, and fresh thyme for seasoning
Directions:
Start by seasoning the cubed chicken with salt and pepper. Heat the olive oil in a skillet over medium heat, then cook the chicken until it’s nicely browned, which should take about 7 to 8 minutes. Once done, remove the chicken and set it aside.
Using the same skillet, add the minced garlic and sliced mushrooms, sautéing them until they’re softened, approximately 4 to 5 minutes. Next, pour in the chicken broth, allowing it to simmer for a couple of minutes. Then, add the heavy cream and bring the mixture to a gentle boil.
Stir in the Parmesan cheese and let it cook until the sauce has thickened to your liking. Meanwhile, cook the pasta according to the package instructions and drain it.
Finally, combine the cooked pasta and chicken back into the skillet, making sure everything is well-coated with the creamy sauce. Finish by seasoning with fresh thyme, salt, and pepper, then serve the dish hot. Enjoy your meal!
