Loaded Bacon Cheeseburger Pasta
Ingredients:
12 oz pasta (penne or rotini)
1 lb ground beef
6 slices bacon, cooked and crumbled
1 small onion, diced
2 cloves garlic, minced
1 can (14 oz) diced tomatoes, drained
1 cup beef broth
1 cup heavy cream
2 cups shredded cheddar cheese
1/4 cup ketchup
2 tbsp mustard
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Cook pasta according to package instructions. Drain and set aside.
In a large skillet, cook the bacon until crispy. Remove, crumble, and set aside, reserving a bit of bacon grease in the pan.
Add the ground beef to the skillet and cook over medium heat until browned. Drain excess fat, then add onion and garlic. Cook for 2-3 minutes, until softened.
Stir in the diced tomatoes, beef broth, ketchup, mustard, salt, and pepper. Let simmer for 5-7 minutes, allowing flavors to blend.
Lower the heat, then add the heavy cream and shredded cheese, stirring until the cheese is melted and the sauce is creamy.
Add the cooked pasta to the skillet and toss to coat evenly. Mix in the crumbled bacon.
Garnish with fresh parsley and serve hot.
