Honey Garlic Pork Chops with Mashed Potatoes

Ingredients:

For the Pork Chops:

4 bone-in or boneless pork chops (1-inch thick)
3 tablespoons honey
3 tablespoons soy sauce
2 tablespoons olive oil
4 garlic cloves, minced
1 teaspoon apple cider vinegar
1/2 teaspoon black pepper
Salt to taste
For the Mashed Potatoes:

2 lbs potatoes (Yukon gold or russet), peeled and cubed
1/2 cup milk (warm)
4 tablespoons unsalted butter
Salt and pepper to taste

Directions:

Prepare the Pork Chops: In a small bowl, whisk together honey, soy sauce, olive oil, garlic, apple cider vinegar, and black pepper. Set aside.
Heat a skillet over medium heat and sear the pork chops for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
Pour the honey garlic sauce into the skillet and let it simmer for 1-2 minutes, stirring occasionally. Add the pork chops back into the skillet and spoon the sauce over them. Simmer for 5-7 minutes or until the pork chops are cooked through (internal temperature of 145°F).
Make the Mashed Potatoes: While the pork chops are cooking, boil the cubed potatoes in salted water for 15-20 minutes or until fork-tender. Drain and mash the potatoes until smooth.
Add warm milk, butter, salt, and pepper to the potatoes and mix until creamy. Adjust seasoning to taste.
Serve the pork chops over the mashed potatoes and drizzle with extra honey garlic sauce from the skillet.
