Ingredients:

For the Steak:
2 ribeye steaks (about 1 inch thick)
Salt and pepper, to taste
1 tablespoon olive oil
For the Shrimp:
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon smoked paprika
Salt and pepper, to taste
For the Zesty Chimichurri Sauce:
1 cup fresh parsley, finely chopped
1/2 cup fresh cilantro, finely chopped
3 cloves garlic, minced
1 small red onion, finely chopped
1 teaspoon red pepper flakes (adjust to taste)
1/2 cup olive oil
1/4 cup red wine vinegar
Juice of 1 lime
Salt and pepper, to taste

Directions:

1. Make the Chimichurri Sauce:
Combine parsley, cilantro, garlic, red onion, and red pepper flakes in a medium bowl.
Add olive oil, red wine vinegar, and lime juice. Season with salt and pepper to taste.
Stir until well mixed and set aside to allow the flavors to meld.
2. Prepare the Steaks:
Take the ribeye steaks out of the fridge and let them sit at room temperature for about 30 minutes.
Preheat a grill or skillet over medium-high heat. Season the steaks generously on both sides with salt and pepper.
Add olive oil to the skillet or grill. Cook the steaks for 4–5 minutes per side for medium-rare or adjust the cooking time to your desired doneness. The internal temperature for medium-rare is 145°F (63°C).
Remove the steaks from the heat and allow them to rest for 5 minutes before slicing.
3. Cook the Shrimp:
Heat olive oil in a large skillet over medium heat.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the shrimp, smoked paprika, salt, and pepper. Cook for 2–3 minutes per side, or until the shrimp turn pink and are fully cooked.
4. Assemble and Serve:
Slice the rested steaks and place them on a serving platter.
Add the cooked shrimp to the platter.
Drizzle the chimichurri sauce generously over the steak and shrimp.
Garnish with additional fresh herbs if desired. Serve with extra chimichurri on the side.
