Korean BBQ Meatballs with Spicy Mayo Dip

Ingredients:

For the Meatballs:

1 lb ground beef
1/2 cup breadcrumbs
1 egg
3 tablespoons soy sauce
2 tablespoons brown sugar
2 cloves garlic, minced
1 teaspoon ginger, minced
1/4 teaspoon black pepper
1 tablespoon sesame oil
1/4 cup green onions, chopped
For the Spicy Mayo Dip:

1/2 cup mayonnaise
2 tablespoons gochujang (Korean chili paste)
1 tablespoon rice vinegar

Directions:

Preheat the oven to 400°F (200°C).
Prepare the meatball mixture: In a large bowl, mix together the ground beef, breadcrumbs, egg, soy sauce, brown sugar, minced garlic, ginger, black pepper, sesame oil, and chopped green onions. Stir until well combined.
Form the meatballs: Shape the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
Bake the meatballs: Place the meatballs in the preheated oven and bake for 20-25 minutes, or until they are cooked through and browned.
Make the spicy mayo dip: While the meatballs are baking, combine the mayonnaise, gochujang, and rice vinegar in a separate bowl. Mix well until smooth.
Serve: Once the meatballs are ready, serve them hot with the spicy mayo dip on the side for dipping.

Tips:

Adjust portion sizes by doubling or halving the ingredients based on your family size.
For a lighter option, swap out the ground beef for ground turkey or chicken.
Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for later.
