Grilled Chicken Burrito with Melted Cheese & Pico de Gallo
Ingredients
For the Grilled Chicken:
2 large chicken breasts (boneless, skinless)
1 tbsp olive oil
1 tsp chili powder
1 tsp smoked paprika
1 tsp garlic powder
1 tsp ground cumin
Salt and pepper to taste
For the Cheese Sauce:
1 cup shredded cheddar cheese
1/2 cup heavy cream
1 tbsp butter
1/2 tsp garlic powder
For the Pico de Gallo:
2 medium tomatoes (diced)
1/4 cup red onion (finely chopped)
1 tbsp fresh cilantro (chopped)
1/2 tsp lime juice
Salt to taste
For Assembly:
2 large flour tortillas
1/2 cup shredded mozzarella cheese
Fresh cilantro (for garnish)
Instructions
Step 1: Marinate & Grill Chicken
Combine olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper in a bowl.
Rub the marinade over the chicken breasts.
Heat a grill or grill pan to medium-high heat. Cook the chicken for 6-7 minutes on each side until fully cooked.
Slice the grilled chicken into bite-sized strips.
Step 2: Prepare the Cheese Sauce
In a saucepan, melt butter over low heat.
Stir in the heavy cream and heat until warm.
Gradually add shredded cheddar cheese, whisking until smooth and creamy.
Step 3: Make the Pico de Gallo
Combine diced tomatoes, red onion, cilantro, lime juice, and salt in a bowl. Mix well.
Step 4: Assemble the Burrito
Warm the flour tortillas in a skillet.
Spread a layer of cheese sauce on the tortilla.
Add grilled chicken strips and sprinkle shredded mozzarella cheese.
Roll the tortilla into a burrito shape.
Step 5: Grill the Burrito
Heat a grill pan over medium heat.
Place the burrito seam-side down and grill for 1-2 minutes per side until golden with grill marks.
Step 6: Garnish & Serve
Drizzle more cheese sauce on top of the burrito.
Top with pico de gallo and fresh cilantro.
