Tender chicken breasts slow-cooked in a rich and creamy sun-dried tomato sauce, delivering a meal so delicious it’s proposal-worthy.

Ingredients:

4 chicken breasts, skin-on or skinless
2 teaspoons Italian seasoning
Salt and freshly ground black pepper, to taste
1 tablespoon unsalted butter
1 teaspoon olive oil (or oil from sun-dried tomatoes)
½ cup (120ml) white wine or chicken broth
4 tablespoons diced sun-dried tomatoes
1 teaspoon sweet paprika
1 teaspoon garlic granules
1 cup (225g) sour cream or heavy cream
2-3 tablespoons grated Parmesan cheese
2 tablespoons fresh flat-leaf parsley or basil, chopped
Optional: 1 tablespoon cornstarch mixed with 2 tablespoons cold water (for thickening)

Directions:

Pat the chicken breasts dry with paper towels. Season with salt, pepper, and Italian seasoning.
In a skillet or the slow cooker (if it has a sauté function), heat the butter and olive oil over medium heat. Sear the chicken breasts, skin side down, until golden brown. Flip and sear the other side briefly.
Transfer the chicken to the slow cooker (if seared in a skillet). Pour in the white wine or chicken broth. Add the sun-dried tomatoes, paprika, and garlic granules.
Cover and cook on the LOW setting for 1.5 to 2 hours, or until the chicken reaches an internal temperature of 165°F (75°C).
If a thicker sauce is desired, stir in the cornstarch slurry about 10 minutes before the end of cooking, allowing it to heat through.
Stir in the sour cream or heavy cream until well combined. Add the grated Parmesan and chopped parsley or basil. Adjust seasoning with additional salt and pepper if needed.
Serve hot over pasta, rice, or mashed potatoes, garnished with extra Parmesan and herbs if desired.
