Crispy Parmesan-Crusted Chicken Penne with Creamy Sauce
Ingredients:
2 boneless, skinless chicken breasts
1 cup grated Parmesan cheese
1/2 cup breadcrumbs
2 tbsp olive oil
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
2 cups cooked penne pasta
Salt and pepper to taste
Fresh basil for garnish
Directions:
Preheat oven to 400F 200C.
Mix Parmesan cheese and breadcrumbs on a plate. Coat each chicken breast in the mixture.
Heat olive oil in a skillet over medium-high heat, cook chicken until golden on both sides, about 4 minutes per side.
Transfer chicken to a baking dish and bake for 15-20 minutes, or until fully cooked.
In the same skillet, sauté garlic for 1 minute. Add chicken broth and heavy cream, simmer for 5 minutes.
Toss cooked penne pasta in the creamy sauce, season with salt and pepper.
Slice the Parmesan-crusted chicken and serve on top of the pasta, garnishing with fresh basil.
