French Onion Beef Roll-Ups
Ingredients:
– 1 pound thinly sliced beef (such as flank or sirloin)
– 2 large onions, thinly sliced
– 3 tablespoons unsalted butter
– 2 cloves garlic, minced
– 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
– 1 cup beef broth
– 1 tablespoon Worcestershire sauce
– Salt and pepper to taste
– 6 slices provolone cheese
– 1 tablespoon olive oil
– Fresh parsley, chopped (for garnish)
– Balsamic glaze (optional, for drizzle)
Instructions:
1. Caramelize the Onions: In a large skillet, melt the butter over medium heat. Add the sliced onions and cook slowly, stirring occasionally, until they are golden brown and caramelized (about 20-25 minutes). Stir in minced garlic and thyme for the last 2 minutes of cooking. Season with salt and pepper, then remove from the skillet and set aside.
2. Prepare the Beef: Lay out the thin slices of beef on a clean surface. Season both sides with salt and pepper. Place a slice of provolone cheese on each slice of beef followed by a small scoop of the caramelized onion mixture.
3. Roll and Secure: Starting at one end, tightly roll each beef slice around the filling. Use toothpicks to secure the rolls if needed.
4. Sear the Roll-Ups: In the same skillet, add the olive oil and heat over medium-high. Once hot, place the roll-ups seam side down and sear for about 3-4 minutes until browned. Flip and sear on the other side for an additional 3-4 minutes.
5. Deglaze and Simmer: Once browned, carefully add the beef broth and Worcestershire sauce to the skillet. Bring to a gentle simmer, cover, and let it cook for about 10 minutes, allowing the flavors to meld together.
6. Serve: Remove the roll-ups from the skillet and discard the toothpicks. Plate and drizzle with balsamic glaze if desired. Garnish with fresh parsley.
