Spinach and Ricotta Stuffed Shells Recipe

Ingredients:

12 jumbo pasta shells
2 cups ricotta cheese
1 1/2 cups cooked spinach, squeezed to remove excess water
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 egg
1 jar marinara sauce
1 tbsp olive oil
2 cloves garlic, minced
Fresh parsley for garnish
Salt and pepper to taste

Instructions:

Preheat and Prepare:

Preheat your oven to 375°F (190°C).
Cook the jumbo pasta shells according to package directions. Drain and set aside.
Prepare Filling:

In a mixing bowl, combine the ricotta cheese, cooked spinach, shredded mozzarella, grated Parmesan, and the egg. Season with salt and pepper to taste.
Stuff the Shells:

Fill each cooked pasta shell with the ricotta-spinach mixture.
Prepare Sauce:

In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
Add the marinara sauce and stir to combine. Season with salt and pepper.
Assemble and Bake:

Spread a thin layer of marinara sauce on the bottom of a baking dish. Place the stuffed shells in the dish and cover with the remaining sauce.
Top with additional shredded mozzarella cheese.
Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve:

Garnish with fresh parsley and serve warm!
